Making an oyster omelette

I took this photo at a oyster omelette place. It was $60 for a serving. It wasn't bad. Just not very filling. I usually order it with three to four extra eggs which brings the price up to around $100. In this picture the woman was teaching the young man how to make the omelette.

I asked about the process and she says it's very technical. She had to flip the egg at just the right time using just the right angle to make it taste the way it does. I think a lot of it is just talk, but she said she has been in business in the same spot for the past thirty one years. That's longer than I have been a live so maybe she is rigth about the technical aspects of making an oyster omelette.
